In October 2008 I took an amazing trip to Lafayette, Louisiana. I confess to eating my way through the heart of Cajun Country and was pleasantly surprised at all the things to do and see. One of which were the amazingly cool murals in downtown Lafayette.

Jennifer A. Huber is an award-winning travel and outdoor blogger and writer in Southwest Florida. Originally from Buffalo, N.Y., a hiking trail led her to a career path in the tourism industry for more than 30 years. That’s a part of the country I haven’t been to. I’d love to go and have some real Cajun food (though I’ve learned to make a sort of chicken gumbo). I’m sure my wife would enjoy the food too.
I’d definitely love to return to Cajun Country – so many cool things to see, do and taste!
